Gochujang is officially here! 🌶️

Bibimbap Inspired Bowl with Bulgogi Mushrooms & Crunchy Gochujang Lentils Recipe

Makes: 2 servings
Prep Time: 30 minutes
Cook Time: 25 minutes

Ingredients:
Rice:
2 cups cooked short-grain white rice
1 tsp toasted sesame oil

Bulgogi-Style Mushrooms:
6 oz shiitake mushrooms, sliced
2 tbsp coconut aminos
2 tbsp grated apple
1 tsp maple syrup
2 tsp toasted sesame oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tsp avocado oil

Spinach Namul:
4 cups fresh spinach, loosely packed
1/4 tsp toasted sesame oil, or to taste
Pinch of salt

Carrots:
2 medium carrots, julienned
1 tsp avocado oil
Pinch of salt

Zucchini:
1 medium zucchini, julienned
1 tsp avocado oil
Pinch of salt

For the Bowls:
1/4 cup Lentil Telepathy’s Crunchy Toasted Gochujang Lentils
1 cup kimchi
2 eggs, cooked over easy in 1 tsp avocado oil, optional
2 green onions, minced

This month’s snack donation went somewhere close to home. ❤️

Tucked away in Oceanside, WRC is doing incredibly important work, offering support, resources and free counseling services to those who need them.

On October 3, WRC is hosting an event to help raise awareness about domestic violence and the resources available in our community.

The forklifts. Early mornings. Cold pitches. The warehouse Tetris. And that completely surreal feeling of walking into a store and seeing something we built offered on the shelf.
