The Mad Sausage Scientist once woke up in a cold sweat with a terrifying thought: what if his sausages had become… ordinary? For a man who’d accidentally promoted a lamb to Head of Research and considered flavour experiments a perfectly sensible use of an afternoon, this was a full-blown emergency.

The Mad Sausage Scientist was worried.

Not because the sausages were bad.

Not because customers weren’t enjoying them.

But because lately he’d started to wonder…

“Have I become predictable?”

The thought was unbearable.

So, in the interests of science, MSS organised a highly professional flavour experiment.

On the laboratory bench sat a smorgasbord of tiny tasting glasses from around the world.

Whisky.

Rum.

Tequila.

Gin.

Vodka.

Brandy.

Each one carefully evaluated for its sausage-making potential.

Hours passed.

Charts were drawn. Notes were taken.

A lamb somehow became Head of Research.

Still nothing sparked inspiration. Then MSS reached the final glass.

Ouzo.

The moment he tasted it, the laboratory erupted into chaos.

The test tubes bubbled.

The recipe books flew open.

Greek music appeared from nowhere.

Someone yelled “OPA!”

The lamb yelled it too.

Suddenly MSS could see it.

A bold lamb sausage bursting with garlic, lemon and a cheeky splash of ouzo.

But something was missing.

As fate would have it, a neighbour from right here in Palm Beach arrived carrying a basket of freshly picked limes from their backyard tree.

MSS squeezed one into the mix.

Silence.

Then a grin.

The Boozy Oozy Ouzo Sausage was born.

Greek-inspired lamb, garlic, lemon, local Palm Beach limes and just enough ouzo to make things interesting.

This one’s for the adventurous grown-ups.

The ones who believe life is too short for boring sausages.

THE WAIT IS OVER!

After spending last weekend being thoroughly spoiled by Mrs Mad Sausage Scientist and her famous homemade apple crumble dessert, MSS disappeared into the sausage lab determined to create his own savoury version.

Well… after much experimenting, note-taking, cackling and questionable amounts of pork, he finally did it.

Introducing this week’s creation…

THE SUNDAY CRUMBLE SAUSAGE!

A delicious pork sausage packed with slow-cooked apples, caramelised onions, warming spices and a few secret touches from the laboratory.

But that’s not all…

The mystery ingredient at today’s Sausage Station is…

PORK CRACKLE CRUMBLE!

That’s right. Crispy crackling pieces scattered over the top to create the ultimate savoury “crumble” experience.

We’ll also have warm apple sauce and our fresh Orchard Slaw available so you can build your own Sunday Crumble masterpiece.

It’s comfort food.
It’s a sausage.
It’s slightly ridiculous.

The Mad Sausage Scientist is officially back on duty at Lakeside Meats…

…but while he was SUPPOSED to be relaxing aboard the magnificent Carnival Encounter, it seems MSS simply couldn’t switch off the sausage brain.

What began as a peaceful holiday quickly turned into an undercover culinary investigation after MSS detected what he described as “a potentially missed flavour opportunity” somewhere near the buffet deck.

Before long, the ship’s Head Chef found himself deep in conversation with the wild-haired meat mastermind himself — discussing seasoning profiles, sausage texture, BBQ techniques and whether cruise sausages could benefit from “just a tiny touch more theatrical flair.”

Witnesses report:
• vigorous hand gestures
• intense nodding
• one passionate discussion about crispy toppings
• and MSS inspecting sausages with the concentration of a man defusing a bomb

Even on holidays… the lab never truly closes.

The scary part?

MSS has returned home inspired.

And that usually means trouble for the mincer.

This Saturday at Lakeside Meats we’re bringing a little extra community spirit to the Sausage Sizzle!

We’re excited to welcome the Burleigh Heads Palm Beach Croquet Club along to the shop as they help promote their upcoming Family Fun Day on Saturday 14th June.

Now before you say “Croquet?!” … trust us — this isn’t just a bunch of people quietly tapping balls around a lawn.

These legends are passionate, welcoming, social, competitive, and apparently VERY serious about technique.

They’ll be set up during our Saturday event chatting with customers, sharing information about the club, showing off some of the equipment they use, and even letting the kids (and probably a few curious adults) have a go.

So while you’re grabbing your weekly meat, tasting the Sausage of the Week, or hanging around the Sausage Station… come say hello and support another fantastic local community group.

Over the weekend, Mrs Mad Sausage Scientist decided the poor overworked scientist needed spoiling…

So she baked him a warm, lip-licking homemade dessert loaded with sweet goodness and topped with melting ice cream and rich custard.

Well…

That may have been a mistake.

Because after one bite, the Mad Sausage Scientist slowly lowered his spoon… stared into the distance… and disappeared into the sausage lab without saying a single word.

For the next three hours:
BANGING.
CLATTERING.
LOUD CACKLING.
AND A VERY STRANGE SMELL OF “SOMETHING DELICIOUS” drifting through Lakeside Meats.

At one point Mrs MSS opened the lab door to find him surrounded by apples, onions, mystery ingredients, crackling experiments and scribbled recipe notes… while several highly unqualified pigs appeared to be assisting with “quality control.”

His only response?

“IT WILL CHANGE WINTER FOREVER!”

This Saturday’s sausage may be one of his strangest creations yet…

And somehow…
it actually works.
