The Queen of the Turkey Barn is hanging up her crown...yep, after 12 years, Kim is leaving LGCM for a new adventure.

You all got to see (and hear) the cooking tips and recipe ideas she was always willing to share with anyone who was looking a little confused in front of the meat case, but the behind-the-scenes work was just as important.

It was Kim who got us organized with the spreadsheets and order systems that made the turkey barn run like clockwork, and sent each roast home with the right customer over Christmas.

We've grown a lot since Kim joined, and she's a big part of making the LGCM that you know and love today.

While today is her last day as a full-time employee of LGCM, we wish her nothing but the best as she takes on her next challenge.

Thank you for everything, Kim (and Jake & Alyssa) - we're so grateful for you!

Here’s how Nick makes Tri-Tip sing:

1. Season it generously. Make your own Santa Maria-style rub or use a bold beef rub like the Texas BBQ Rodeo Rub.
2. Get your grill set for indirect cooking at 375 with your charcoal piled low and a bit of hickory or oak wood on top for natural smoke flavor. Cooking over wood gives you the best flavor, but charcoal works perfectly well. Gas is okay but you will miss a lot of flavor.
3. Put the steak on the cooler side of your grill and cook about 10-15 minutes per side until the beef reaches 135F. Cook times will vary based on the size of your grill and steak, so if you have a remote thermometer, it will really help.
4. Let the steak rest for 10 minutes and then slice it against the grain. Two muscles come together to form this steak, so you may see the grain running in different directions. Cut the steak into pieces that have the grain running in the same direction before slicing for best results.
