All this snow in the UP might look pretty… but it actually slows us down!

When our lines get buried in snow, they stay too insulated—which means they don’t thaw out when temps rise. And if the lines don’t thaw… the sap doesn’t run.

So what do we do?
We dig them out so the sun and air can hit the lines and warm them up!

More work… but totally worth it when the sap starts flowing.

You might be wondering what “sugar sand” actually is?

Sugar sand (also called niter) is a natural mineral buildup that forms during the maple syrup boiling process. It’s made up of things like calcium and other nutrients that come straight from the sap- totally natural, but not something you want in your finished syrup. That’s why we take extra care to clean it out of our evaporator and filter our syrup thoroughly.

The result? Smooth, crystal-clear syrup with a perfect flavor. It’s all part of making sure every bottle meets our standards-from the first boil to the final pour.
