I am in my house hoodie, my winter booties and there are blankets on every chair. Tea is always on. And, I love that I have the excuse of the weather to stay inside and read for hours on end. Although, I have to say, even in the rain, I am still walking lots and enjoying the freshness of the air. I am also ever so happy to have time to make comfort food, like soups and stews. It's such a great time of year!

Last night, Victor made this red lentil based mac & cheez. A combination of red lentils, cashews, nutritional yeast and miso. It was pretty delicious with a drizzle of olive oil on top.

When you have friends over for dinner, and there’s no eggs, dairy, or gluten going in the desert - I get a big smile. I love a challenge. I think these were a winner. Thanks for giving me a reason to get creative with dessert again . These were made using our flax that I ground, along with cocoa powder, our chocolate chips and wafers, and our almond flour. I’ll post the recipe in the next few days. I’m making them again tonight for a book club dinner tomorrow night!
