We asked Michelle from The Source for an easy-to-prepare snack that lasts her all week. Her go-to: Chocolate Cranberry Quinoa Slices 😋

Here is the recipe - if you can't get your hands on puffed quinoa, try our puffed buckwheat instead:

Ingredients:
2 cups puffed quinoa or puffed buckwheat
1 cup dark chocolate, roughly chopped
¾–1 cup dried fruit, such as cranberries

Method:
Toast the puffed quinoa or buckwheat in a dry frying pan over medium heat for a few minutes, stirring regularly, until crisp. Alternatively, spread it on a tray and gently toast in a low oven. Allow to cool.

Melt the dark chocolate until smooth.

Add the puffed quinoa and dried fruit to the chocolate and stir until everything is evenly coated.

Spread the mixture onto a lined tray and press into an even layer.

Refrigerate for around 1 hour, or freeze for 15–30 minutes, until firm.

Slice or break into pieces.
Store in an airtight container in the fridge and enjoy all week 👍

Staff Bake Off #1 🤩

Julie’s favourite Cashew Cookies 🍪

½ cup unsalted cashew butter
⅓ cup coconut sugar
1 tspn vanilla extract
⅛ tspn fine salt
¼ cup chopped raw cashews & dark chocolate chips
⅓ cup gluten-free flour
½ teaspoon baking powder
1 tablespoon non-dairy milk
pinch of flaked salt

Preheat oven to 160°C line a tray with parchment paper or a silicone mat.
In a mixing bowl, stir together the cashew butter, sugar, vanilla, salt, and cashews or chocolate chips until combined.
Add the flour and baking powder, and mix well until no visible flour remains. The dough will be very dry and thick. Add the milk, and mix again until it has been fully absorbed.
Roll into walnut size balls & press with a fork to gently press down to flatten into shape.
Bake for 10 to 12 minutes, keeping a close eye on the cookies near the end. Cashew butter tends to burn quickly, so slightly under-done is better in this case. Immediately sprinkle with flaked sea salt, if using. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
