One of my favourite Alpine Italian cheeses is this Monte Veronese La Casara Roncolato . Aged for more than 6 months, it's a DOP cheese and has special classification from Italian Food under 'cultural protection'.
We understand the fuss.. Smooth, creamy and a wonderful example of cheese made with mountain pastured cows.
