Potato, Leek & Bacon Soup 🥔🥓
Nothing beats walking into the house after a long day and smelling this cooking away. Super easy, super filling, and perfect for cooler weather.
Ingredients:
1 kg potatoes, washed and chopped
750 g diced bacon
3 leeks, sliced
2 litres chicken stock
Salt & pepper to taste
1 tub sour cream
Crusty bread to serve
Method:
Throw the potatoes, bacon, leeks and chicken stock into the slow cooker. Give it a bit of salt and pepper, pop the lid on, and cook on low all day (about 6–8 hours).
Once everything is nice and soft, stir through the sour cream and blend it up with a stick mixer until it’s as smooth (or chunky) as you like.
Serve it hot with some crusty bread on the side… so good.
