Crispy Flathead Tacos with Smoky Chilli Slaw. Flathead is one of the great Australian fish – sweet, delicate and perfect for frying. Tucked into a warm corn tortilla with a smoky, crunchy slaw and a squeeze of lime, it becomes a fish taco that can stand up to any version you’d find anywhere in the world. This has become a regular weeknight dinner in our house, and the kids love it.

The smoky chilli slaw can be made ahead and keeps well in the fridge, which makes this dinner come together very quickly on the night.

Carpaccio is an Italian classic – thinly sliced raw protein dressed beautifully and simply. At The Fishmonger’s Son, kingfish is one of our favourite fish to eat raw because it has this incredible richness and silkiness that lends itself perfectly to being dressed with nothing more than good olive oil, lemon, and a scattering of something a little salty and sharp. It’s a dish that speaks for itself.

The key here is sourcing the freshest, sashimi-grade kingfish you can find – come and see us in store and we’ll sort you out. The thinner you can slice it, the more elegant the result.

ANTHONY’S B**R BATTERED FISH + POTATO CAKES. Anthony’s dad ran a wholesale seafood business that supplied fish + chip shops across Melbourne. Their flake was second to none. Anthony grew up surrounded by that world — the smell of the fryer, the rhythm of the shop, the simple pleasure of really good battered fish.

This recipe is a nod to that. Classic b**r batter, golden flake, handmade potato cakes on the side.
