One for the couscous lovers. Firstly we marinade the eggplant in Middle Eastern spices and roast until golden. The couscous base is full of chick peas, pepitas, zucchini + capsicum and coriander.
You can serve with a dollop of plain yoghurt and side salad for extra crunch and fibre 😉🍴
