Fatteh is a beloved Middle Eastern comfort dish built in layers, pairing crisp, toasted pita with warm, savoury toppings and a cool, garlicky yogurt sauce for contrast. Its name comes from a word meaning โcrumbsโ or โcrushed,โ reflecting its origins as an ingenious way to repurpose leftover flatbread into something hearty and satisfying.๐ซถ
Below is an easy-peasy recipe for you to tryโ๏ธ
Ingredients:
โข 1 rotisserie chicken, skin and bones removed and shredded
โข 2 cups chicken broth (1 chicken stock cube dissolved in boiling water or store-bought chicken stock)
โข 2 pita breads, cut into squares
โข 1-2 teaspoon olive oil
โข 3 cups Madi's Double Cream Greek Yogurt
โข 2-3 garlic cloves, crushed
โข 1 teaspoon salt
โข squeeze lemon juice
โข 2 cups cooked basmati rice
For garnish:
โข mint and dried paprika
โข toasted almond slivers or 1/4 cup toasted pine nuts
โข 3 tablespoons chopped parsley
Instructions:
1. Shred the cooked chicken. Add the shredded chicken to the warm broth, and keep it on low heat until serving so the chicken warms through.
2. Toast the pita bread in the oven by placing in a single layer on a parchment lined baking sheet, and drizzling well with olive oil and tossing to combine. Bake 180 C for 8-10 minutes or until crispy and golden brown, and set aside.
3. Mix the yogurt with the crushed garlic, salt, and lemon juice. Stir well so that it combines well.
4. Assemble by placing the rice in the base of a deep serving dish. Pour the chicken broth/ chicken mixture over the top, scattering the shredded chicken evenly. Spoon dollops of the garlic yogurt on top and smooth out, then top with the crispy pita bread. Garnish with mint, paprika, chopped parsley and toasted nuts. ENJOY! โ๏ธ
