🍜 Easy Mushroom Ramen
A comforting one-pot meal that’s satisfying, nutritious and packed with flavour. This easy mushroom ramen is made with a fragrant umami broth and topped with noodles, sautéed mushrooms, fresh veggies, boiled eggs and sesame seeds.
Serves: 2–3
Ready in: About 45 minutes
Ingredients:
• 1 sachet Let’s Cook umami mushroom stock
• 3 cloves garlic, sliced
• 3cm k**b ginger, sliced
• 2 cups beef stock
• 2 spring onions, cut into 5–8cm pieces
• 1 red or green chilli, deseeded
• Salt and milled pepper, to taste
For serving:
• PnP noodles
• Sautéed mushrooms
• Blanched pak choi and PnP Tasty Stem broccoli
• Edamame beans
• Sliced radishes
• Fresh basil
• Boiled eggs
• Sesame seeds
Method:
1. Combine the umami mushroom stock, garlic, ginger, beef stock, spring onions and chilli in a pot over medium heat.
2. Simmer for 15–20 minutes until fragrant.
3. Strain the broth and discard the vegetables.
4. Season the broth to taste, then divide between 2–3 bowls.
5. Top with noodles, sautéed mushrooms, blanched veggies, edamame beans, radishes, basil and boiled eggs.
6. Sprinkle with sesame seeds just before serving.
