You can make a rich and hearty Wildpig/Bushpig stew slow-cooking cubed meat with red w**e, aromatic vegetables, and herbs.
Ingredients
• 1 kg wild pig meat, cut into 4cm cubes
• 2 tablespoons olive oil
• 1 large onion, chopped
• 2 carrots, diced
• 2 celery stalks, diced
• 3 garlic cloves, minced
• 1 cup red w**e
• 2 cups beef or game stock
• 1 can diced tomatoes or fresh
• 2 tablespoons tomato paste
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• 2 bay leaves
• Salt and black pepper to taste
• Instructions
1. Brown the meat: Season the wild pig cubes with salt and pepper. Heat olive oil in a large pot or oven over medium-high heat.
Add the meat and sear until well-browned on all sides.
Remove the meat and set it aside.
2. Sauté the aromatics: Add the chopped onion, carrots, and celery to the same pot. Cook for 5 minutes until soft.
Stir in the minced garlic and tomato paste, cooking for 1 more minute.
3. Deglaze: Pour in the red w**e, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes to reduce slightly.
4. Simmer: Return the meat to the pot. Add the diced tomatoes, stock, thyme, rosemary, and bay leaves. Bring the liquid to a boil, then reduce the heat to low.
5. Slow cook: Cover the pot and simmer on low heat for 2 to 3 hours (or until the wild pork is tender), stirring occasionally. Adjust salt and pepper before serving.
