🍛 Pick n Pay Recipe: Anjali’s Ultimate Butter Chicken

🥶 Cold-weather comfort with rich, creamy flavour. This yoghurt-marinated butter chicken is simmered in a delicious, comforting curry sauce and served with your favourite flat bread or rice. 🫓🍚

👨‍👩‍👧‍👦 Serves 4
⏱️50-55 minutes

📝Ingredients List

½ jar Patak’s Butter Chicken Paste
2 tbsp thick Greek yoghurt
4 chicken thighs, skinless and
boneless, cut into large bitesize pieces
2 tbsp butter
1 large onion, finely chopped
75g tomato puree
75g passata
150ml heavy cream
1 tsp oil
Fresh coriander, roughly chopped, for garnish

👩‍🍳 Method

• In a bowl, mix the yoghurt and 2 tbsp Butter Chicken Paste. Add in the chicken and coat. Cover and refrigerate overnight.
• The next day, heat a BBQ or griddle pan until smoking. Cook the chicken until charred on all sides. Remove from the heat and brush with a little butter
• In the meantime, make the butter chicken sauce by gently heating the oil with the remaining butter. Fry the onion for 5 minutes.
• Add the remaining Butter Chicken Paste, sweet smoked paprika and 100ml of water. Stir well and cook for 5 minutes.
• Stir in the tomato puree, passata, cream and 150ml water. Simmer for 15 minutes. Add the charred chicken and allow to cook for 5 minutes.

Serve garnished with coriander and your favourite flat bread or rice🌿

🍝 Tomato Soup Pasta & Meatballs

Cold-day comfort made easy! Tender meatballs and pasta tossed in a rich tomato soup sauce with basil pesto and Parmesan — a quick, comforting family favourite that’s perfect for a cosy Sunday meal.

All ingredients can be found at Pick n Pay stores.

- Serves 2-4
- More than 30 minutes

Shop Ingredients:

1 tub Pick n Pay Ready-Made Tomato Soup
400g spaghetti or pasta of choice
1 pack Pick n Pay ready-made meatballs, seared in a pan
2 tbsp olive oil
2 cloves garlic, crushed
½ cup grated Parmesan cheese
¼ cup basil pesto
Salt & black pepper to taste
Fresh basil leaves for garnish

Method:
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a pan and sauté garlic until fragrant.
Add the tomato soup and simmer gently.
Add the already seared meatballs and cook until heated through.
Toss cooked pasta through the sauce.
Season with salt and black pepper.
Serve topped with basil pesto and grated Parmesan.

Serving Suggestion:
Serve with a fresh green salad or garlic bread for a complete meal.
