🍝❤️ Grandma’s Classic Lasagna ❤️🍝
Rich tomato sauce, layers of creamy ricotta, perfectly seasoned meat, and golden bubbling mozzarella… this is the kind of comforting lasagna that brings everyone to the table 🤍
A true Italian-inspired family favourite, made for sharing 🍷✨
👩‍🍳 Recipe:
Ingredients:
• 60 ml extra virgin olive oil
• 225 g ground beef chuck
• 225 g ground sirloin
• 4 tsp minced garlic
• ½ tsp dried oregano
• ¼ tsp crushed red pepper
• 30 ml tomato paste
• 2 x 800 g cans cubed tomatoes
• 1 x 800 g tomato purée
• 500 ml chicken stock
• 2 bay leaves
• 6 thyme sprigs
• Pinch of sugar
• Salt & black pepper
• 680 g chourizo, sliced or cubed
• 900 g fresh ricotta
• 60 ml parsley, finely chopped
• 30 ml basil, finely chopped
• 50 g grated Parmesan cheese
• 450 g mozzarella, shredded
• 1 large egg, beaten
• 12 dried lasagna sheets
Method:
1️⃣ Heat olive oil in a large pot. Brown the beef and sirloin until fully cooked.
2️⃣ Add garlic, oregano, and crushed red pepper. Stir in tomato paste.
3️⃣ Add cubed tomatoes, tomato purée, stock, bay leaves, thyme, sugar, salt, and pepper. Simmer for about 1½ hours until thickened.
4️⃣ In a separate pan, brown the chourizo until cooked through.
5️⃣ In a bowl, combine ricotta, parsley, basil, half the Parmesan, two-thirds of the mozzarella, salt, pepper, and egg.
6️⃣ Cook lasagna sheets until al dente, then drain and cool.
7️⃣ Preheat oven to 190°C.
✨ Layering:
• Spread sauce in the bottom of the dish
• Add lasagna sheets
• Spread ricotta mixture
• Add chourizo and sauce
• Repeat layers
• Finish with sauce and remaining mozzarella & Parmesan
8️⃣ Bake for 45 minutes until golden and bubbling.
9️⃣ Rest for 20 minutes before serving.

🍝✨ Roman-Style Semolina Gnocchi (Gnocchi alla Romana) ✨🍝
A beautiful twist on classic gnocchi – soft, cheesy, and baked to golden perfection 😍 These Roman-style gnocchi are rich, comforting, and so much easier than traditional potato gnocchi. Perfect for impressing guests with minimal stress!
✨ Inspired by Science in the Kitchen and the Art of Eating Well – a true Italian classic 🇮🇹

👩‍🍳 Recipe:
Ingredients:
• 2 medium eggs
• 160 g fine semolina flour (Cavalieri Cheese)
• Pinch of salt
• 500 ml milk
• 40 g melting cheese (Gruberg or Asiago) (Cavalieri Cheese)
• 50 g butter, diced
• 40 g grated Parmesan cheese (Cavalieri Cheese)
Method:
1️⃣ In a bowl, beat the eggs with semolina and a pinch of salt.
2️⃣ Slowly add the milk, mixing until smooth, then stir in the cheese.
3️⃣ Transfer to a saucepan and cook over medium heat, stirring constantly, until thick like porridge (about 5 minutes).
4️⃣ Spread the mixture onto a lightly wet tray and smooth to about 1 cm thick. Let it cool completely.
5️⃣ Preheat oven to 200°C and grease a baking dish with a bit of butter.
6️⃣ Cut rounds using a cutter or glass and arrange them slightly overlapping in the dish.
7️⃣ Dot with remaining butter and sprinkle over Parmesan.
8️⃣ Bake for 20 minutes until golden and bubbling.
9️⃣ Let rest for 5 minutes before serving.

Light, fresh and full of flavour – this classic Italian seafood salad is perfect for warm South African days ☀️ Simple, elegant, and packed with fresh seafood goodness.

• Scallops
• Tuna
• Prawns

👩‍🍳 Recipe:
Ingredients:
• 2.5 litres water
• 3 tbsp + 1 ml salt (available at Cavalieri Cheese)
• 225 g scallops (available at Cavalieri Cheese)
• 225 g prawns (peeled & deveined)
• 225 g tuna, cut into 1–2 cm pieces (available at Cavalieri Cheese)
• 3 celery stalks, finely chopped
• 1 large shallot, finely chopped
• 60 ml fresh parsley, finely chopped
• 60 ml extra virgin olive oil (available at Cavalieri Cheese)
• 45 ml fresh lemon juice
• 1 ml black pepper (available at Cavalieri Cheese)
• Pinch crushed red pepper (optional)
• Butter lettuce or radicchio, for serving
• Lemon wedges
Method:
1️⃣ Prepare a bowl of ice water and set aside.
2️⃣ Bring the water to a boil, add 3 tbsp salt, then reduce heat.
3️⃣ Cook seafood in batches:
• Scallops: 45 sec – 1½ min
• Prawns: 1–2 min
• Tuna: 2–3 min
4️⃣ Transfer seafood to ice water to stop cooking, then drain well.
5️⃣ In a bowl, combine seafood with celery, shallot, parsley, olive oil, lemon juice, pepper, and remaining salt.
6️⃣ Gently mix and let sit for 5 minutes.
7️⃣ Adjust seasoning to taste.
✨ Serve on crisp lettuce or radicchio with fresh lemon wedges.

🍋🍦 Lemon Ricotta Ice Cream Sandwiches 🍦🍋
Fresh, zesty, creamy and just the right amount of indulgent… these lemon ricotta cookies turned ice cream sandwiches are a must-try! Perfect for warm Lowveld days ☀️

• Icing Sugar
• Vanilla Gelato
👩‍🍳 Recipe:
For the cookies:
• 2 ½ cups flour
• 1 tsp baking powder (available at Cavalieri Cheese)
• 1 tsp salt
• 125g butter (softened)
• 2 cups sugar
• 2 eggs (room temp)
• 1 tub ricotta cheese
• 3 tbsp lemon juice
• Zest of 1 lemon
Method:
1️⃣ Mix flour, baking powder, and salt in a bowl.
2️⃣ Beat butter and sugar until light and fluffy (about 5 min).
3️⃣ Add eggs one at a time, mixing well.
4️⃣ Mix in ricotta, lemon juice, and zest.
5️⃣ Fold in dry ingredients.
6️⃣ Cover and refrigerate overnight.
7️⃣ Preheat oven to 190°C.
8️⃣ Scoop dough onto lined baking trays.
9️⃣ Bake for 15 minutes until cooked but still pale.
🔟 Let cool completely.
For the glaze:
• 1 ½ cups icing sugar (available at Cavalieri Cheese)
• 3 tbsp lemon juice
• Lemon zest
Mix until smooth, spoon over cookies, and let set for 2 hours.
✨ To assemble:
Sandwich a scoop of vanilla gelato between two cookies and gently press. Freeze until ready to serve.

🍓🍰 Raspberry Cream Sponge Cake 🍰🍓
Light, fluffy sponge filled with creamy raspberry goodness – the perfect sweet treat! The best part? You can find many of the ingredients right here at Cavalieri Cheese.

Polenta | Baking Powder | Vanilla Extract | Frozen Raspberries | Icing Sugar | Philadelphia Cream Cheese
👩‍🍳 Recipe:
Ingredients:
• 200g butter
• 200g sugar
• 3 eggs
• 200g flour
• 1 tsp baking powder (available at Cavalieri Cheese)
• 1 tsp vanilla extract (available at Cavalieri Cheese)
• 2 tbsp polenta (available at Cavalieri Cheese)
• 200g frozen raspberries, defrosted (available at Cavalieri Cheese)
• 200g Philadelphia cream cheese (available at Cavalieri Cheese)
• 120g icing sugar (available at Cavalieri Cheese)
• 200ml fresh cream
• Zest of 1 lemon + a little lemon juice
Method:
1️⃣ Preheat oven to 180°C and grease two cake tins.
2️⃣ Cream the butter and sugar together until light and fluffy.
3️⃣ Beat in the eggs one at a time, then add the vanilla extract.
4️⃣ Fold in the flour, baking powder, and polenta.
5️⃣ Divide the batter between the tins and bake for 20–25 minutes until golden. Let cool completely.
Filling:
6️⃣ Beat the cream cheese with the icing sugar, lemon zest and a little lemon juice until smooth.
7️⃣ Lightly whip the cream until it just holds its shape and fold it into the cream cheese mixture.
8️⃣ Fold in the defrosted raspberries.
✨ Spread the filling between the two sponge layers, place the sugar-crusted side on top, and finish with a dusting of icing sugar.
Enjoy with coffee or tea and share the sweetness! ☕🍓
