⚽ MONDAY NIGHT FIFA WORLD CUP SNACK IDEA ⚽
Loaded Nachos with Mince, Cheese & Salsa

The FIFA World Cup is on, and Monday night calls for the ultimate couch-side snack! Gather the family, switch on the game, and serve up these crunchy, cheesy, saucy Loaded Nachos — perfect for sharing while you cheer on your favourite team. 🔥

All ingredients are available at Pick n Pay stores nationwide.

Serves: 4–6
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
🛒 1 x 230g–250g packet tortilla chips or nacho chips
🛒 500g Pick n Pay beef mince
🛒 1 tbsp cooking oil
🛒 1 medium onion, finely chopped
🛒 2 tsp crushed garlic
🛒 2 tbsp tomato paste
🛒 1 tsp paprika
🛒 1 tsp ground cumin
🛒 ½ tsp chilli powder, optional
🛒 ½ tsp salt
🛒 ¼ tsp black pepper
🛒 ½ cup water
🛒 1 x 410g tin red kidney beans, drained and rinsed, optional
🛒 1½ cups grated cheddar or mozzarella cheese
🛒 ½ cup salsa
🛒 ½ cup sour cream or plain yoghurt
🛒 1 large avocado, mashed or sliced
🛒 1 medium tomato, diced
🛒 ¼ red onion, finely chopped
🛒 2 tbsp fresh coriander, chopped, optional
🛒 2 tbsp sliced jalapeños, optional
🛒 1 lemon or lime, cut into wedges, optional

Method:

1. Heat oil in a pan over medium heat. Add the onion and cook for 3–4 minutes until soft.
2. Add the crushed garlic and cook for 30 seconds.
3. Add the beef mince and cook for 6–8 minutes, breaking it up with a spoon, until browned.
4. Stir in the tomato paste, paprika, cumin, chilli powder, salt and pepper.
5. Add the water and kidney beans, if using. Simmer for 8–10 minutes until thick and saucy.
6. Spread the tortilla chips onto a baking tray or ovenproof dish.
7. Spoon the mince over the chips, then sprinkle with grated cheese.
8. Bake at 180°C for 8–10 minutes, or grill for 3–5 minutes, until the cheese is melted and bubbling.
9. Top with salsa, sour cream, avo, tomato, red onion, coriander and jalapeños.
10. Serve immediately with lemon or lime wedges.

🍢 Pick n Pay Recipe: Chicken Satay

🥜 Sunday flavour made easy with tender curry-marinated chicken skewers grilled to perfection and served with a rich, creamy satay peanut sauce. Paired with a refreshing cucumber salad, this Chicken Satay brings a delicious balance of spice, crunch and freshness to your Sunday lunch or dinner. 🥒🌶️

👨‍👩‍👧‍👦 Serves 4
⏱️ Prep Time: 15mins | Cook Time: 10mins

📝 Ingredients List

1 tbsp Exotic Yellow Curry
3 tbsp Exotic Coconut Milk
1 cup Exotic Satay Sauce
0.5 cup Extra coconut Milk to brush on chicken
450gm Chicken Breast
2 pcs Cucumber
10 Mint Leaves
0.5 cup White Vinegar
1 tbsp Sugar
1 tbsp Salt
1 pc Big Red Chillies

👩‍🍳 Method

• Soak your bamboo skewers in warm water for an hour to prevent them from burning when grilling.
• Remove the skin from your chicken thighs and take it off the bone. Cut it in long pieces. Put them aside.
• Heat a cast iron pan or have your grill ready. Then preheat your oven to 180 degrees celsius.
• While waiting for the pan to heat up, mix Exotic Yellow Curry Paste and Exotic Coconut Milk in a mixing bowl. Add chicken in and toss them around thoroughly until the curry paste covers all the chicken.
• Take a bamboo skewer and stick the marinated chicken. Be careful not to stick the chicken too tightly and close to each other.
• Put the chicken skewer on to the heated cast iron pan, sear the chicken for two minutes on each side then put the pan in the oven for 5 minutes.
• While waiting for the chicken to cook in the oven, cut cucumber in half and thinly slice them. Take one shallot and a big red chili, slice them up. Put them in a salad bowl.
• Mix together white vinegar and caster sugar. Keep stirring until all the sugar dissolves. Pour your salad dressing into the salad bowl and mix well.
• Take your chicken out of the oven and start plating. Serve chicken satay with Exotic Satay Sauce and cucumber salad.
