Based in the Baynesfield Valley, we locally produce artisanal, handcrafted, old world flavors. We use the best ingredients we can purchase. The meat is deboned, the sinews, glands and fat removed and the now lean meat is combined with the correct ratio of back fat. Sea salt, nitrite/nitrate, the best freshest and where possible whole spices and herbs we can source are used, ground freshly on the d

ay we use them. We use natural casings and real wood smoke. We use no MSG, no MDM, no extenders (other than milk powder), no starches, (entirely Banting friendly), no gluten, no phosphates, no accelerators, no artificial colourants, no flavour enhancers or other preservatives
