Too skinny for the shops, perfect for a cosy stew! 🥕🍲

You might have spotted some rather skinny parsnips in your bockety box this week!

We rescued them from an Irish grower because being too skinny is no reason to go to waste. They taste just as good, and there’s no peeling needed, just a good wash and chop.

Try them in this cosy chicken, parsnip & carrot stew, and get the crusty bread ready for that lovely sauce!

Tomorrow’s lunchbox sorted tonight 😍🍎 Who’s up for a little Sunday sausage roll prep?

Turn your Bockety Box apples and leeks into golden, flaky apple, leek & pork sausage rolls. A delicious way to get ahead for Monday!

Ingredients

• 500g sausage meat
• ½ large leek or 1 small leek, finely sliced
• 2 small Irish apples, grated
• 1 tbsp wholegrain mustard
• Salt & black pepper
• 1 sheet ready-rolled puff pastry
• 1 egg, beaten
• A little oil
• Sesame seeds, optional

Method

1. Gently fry the leek in a little oil until soft, then leave to cool.
2. Mix with the sausage meat, grated apples, mustard, pepper and a small pinch of salt.
3. Cut the pastry in half lengthways. Divide the filling between both pieces, shaping it into a long sausage down each centre.
4. Brush one long edge with egg, fold over and seal. Place seam-side down and cut into smaller rolls.
5. Brush with egg, sprinkle with sesame seeds and bake on a lined tray at 200°C for 25–30 minutes, until golden and cooked through.

Save this recipe for your next batch 🤤
