Peach & Goat Cheese Salad with Honey Mustard Vinaigrette
Serves: 4
SALAD INGREDIENTS
• 1 head butter lettuce, torn
• 2 ripe peaches, cut into 16, ¼-inch wedges
• ¼ medium red onion, thinly sliced
• 4 oz goat cheese, crumbled
• ½ cup fresh basil leaves, torn
• ¼ cup shelled pistachios, chopped
DRESSING INGREDIENTS
• 4 tablespoons extra virgin olive oil
• 2 tablespoons white wine vinegar
• 1 tablespoon Gold’s Honey Mustard
• Salt and pepper, to taste
INSTRUCTIONS
Arrange the lettuce in a large bowl. Top with peaches, red onion, goat cheese, basil, and pistachios.
Whisk the dressing ingredients together and season to taste. Drizzle over the salad and toss gently to combine.
