Thank you Novant Health for coming onsite for a delicious and nutritious soup recipe for the fall!

Provençal Greens Soup 🥣✨

Bring a taste of the French countryside to your kitchen with this simple, comforting, and nutrient-packed greens soup by Martha Rose Shulman! 🌿

🛒 Ingredients:
* 2 tbsp extra-virgin olive oil
* 2 leeks (halved, sliced, and rinsed)
* 4 garlic cloves, sliced
* 6 cups chopped greens (Swiss chard, dandelion greens, or watercress)
* 1½ quarts water (6 cups)
* Kosher salt & black pepper to taste
* 2 large eggs
* 4 thick slices garlic-rubbed country bread, toasted
* Grated Parmesan (optional)

👩‍🍳 Quick Steps:

Sauté: Heat 1 tbsp olive oil in a large pot. Cook leeks until tender (3–5 mins). Add garlic and ½ tsp salt; cook until fragrant (1 min).

Simmer: Stir in the greens until wilted. Add water and salt to taste. Bring to a simmer, partially cover, and cook on low heat for 15–20 minutes. Season with pepper.

Temper: Beat eggs in a bowl. Whisk a ladle of warm (not boiling) soup into the eggs to temper them, then stir the mixture back into the soup off the heat.

Serve: Place a slice of garlic-toasted country bread in each bowl, ladle the soup over it, top with a drizzle of olive oil and Parmesan, and enjoy!

💡 Pro-Tip: You can make this ahead of time through Step 1 several hours before serving! If you only use one green, make it Swiss chard.
