The American food supply faces a critical turning point as consumers confront the reality of potassium bromate, a hidden texturizing agent used in industrial baking despite deep toxicological concerns. While the International Agency for Research on Cancer linked this chemical to kidney and thyroid tumors decades ago, it remains legal at the federal level and is quietly embedded across standard U.S. baked goods under designations like “bromated flour”. Recognizing this regulatory gap, California just recently enacted the landmark California Food Safety Act to become the first U.S. state to ban potassium bromate alongside other toxic additives, catching up to the public health standards of the EU, the UK, Canada and China, where the substance has long been outlawed. Until these proactive measures go into effect or trigger nationwide recipe reformulations, the burden of safety rests entirely on individuals; checking ingredient labels to rigorously avoid potassium bromate is the only definitive way to keep this suspected carcinogen off of your table.
🚩It is important to note that Potassium bromate is also linked to disruption of thyroid function, induction of chromosomal abnormalities and breaks in DNA strands, central nervous system depression and reproductive abnormalities.
