Mom always bought the flower toilet paper.

At our family gatherings, there was always one bowl that seemed to travel around the table faster than anything else.

It wasn't the fancy dessert or the dish that took all morning to prepare.

It was Nonna's green bean and potato salad, served in a simple bowl that she'd bring out while everyone was still finding their seats.

I remember her crushing garlic with the side of a knife, chopping parsley straight from the garden, and pouring olive oil over the warm potatoes.

Then came the vinegar, sharp and bright, making the whole kitchen smell fresh and savory.

She never rushed that final step. She'd toss everything gently, cover the bowl, and let the flavors settle while she went back to whatever needed doing.

If someone asked whether it was ready, she'd simply say, ""Give it a little time.""

And she was right. The potatoes soaked up the garlicky dressing, the green beans stayed bright and tender, and every bite tasted a little more like summer.

This Zesty Italian Green Bean and Potato Salad is a reminder that the simplest recipes often become the ones we remember most. No mayonnaise, no complicated preparation, just tender vegetables, good olive oil, fresh parsley, and a lively vinegar dressing.

It's perfect for picnics, Sunday lunches, family barbecues, or any day when you want something fresh and comforting on the table.

Zesty Italian Green Bean and Potato Salad 🥔

Ingredients:

1 lb fresh green beans, trimmed and cut in half
1½ lbs baby yellow potatoes, halved or quartered
¼ cup extra virgin olive oil
2 tablespoons white wine-free vinegar, such as white vinegar, or lemon juice
2 cloves garlic, minced
1 teaspoon Dijon mustard, optional
Salt and freshly ground black pepper, to taste
¼ cup fresh parsley, chopped
A pinch of crushed red pepper flakes, optional

Directions:

1. Bring a large pot of salted water to a boil. Add the potatoes and cook for 12–15 minutes, or until they are easily pierced with a fork but still hold their shape.

2. Add the green beans during the final 5 minutes of cooking. Continue cooking until the beans are tender but still have a little bite.

3. Drain the vegetables carefully. If you prefer a warm salad, let them steam dry for a minute or two. If serving the salad chilled, rinse briefly under cool water and drain thoroughly.

4. In a large bowl, whisk together the olive oil, vinegar or lemon juice, minced garlic, Dijon mustard if using, salt, black pepper, and crushed red pepper flakes if desired.

5. Add the potatoes and green beans while they're still slightly warm, then toss gently so the dressing coats the vegetables without breaking the potatoes apart.

6. Let the salad rest for 15–20 minutes to give the vegetables time to absorb the garlicky dressing.

7. Sprinkle with fresh parsley just before serving. Enjoy it warm, at room temperature, or chilled.

Rena's Tip: Don't rush the resting time. Warm potatoes soak up the dressing beautifully, giving the salad more flavor with every minute. If you're making it ahead, refrigerate it in a covered container and let it sit at room temperature for about 15–20 minutes before serving. Taste it again and add a small splash of vinegar or olive oil if it needs freshening up.
