What’s Cookin’ at Christopher’s?
🍅Fresh Tomato Caprese Salad with Herb Balsamic Glaze
As usual, most (or all!) of the ingredients can be found right here at Christopher Farms!
Nothing says summer like fresh tomatoes, fragrant basil, creamy mozzarella, and a homemade balsamic glaze.
Ingredients
For the Salad
* A mixture of our fresh tomatoes, chopped
* Fresh Walnut Creek mozzarella
* ½ cup fresh basil leaves, torn (we will have fresh basil in the store restocked by noon today)
* thinly sliced red onion
For the Dressing
* 1 small garlic clove, minced
* ½ tsp L***y Monk mustard
* 2½ tbsp extra virgin olive oil
* ¼ tsp each fresh Italian parsley, thyme, and rosemary, finely chopped (we have fresh herbs)
* ½ tsp salt
* Fresh cracked black pepper
For the Balsamic Glaze
* 2 cups balsamic vinegar
* ½ cup brown sugar
* A few sprigs of fresh thyme
Directions
Make the Dressing
1. Add all dressing ingredients to a jar.
2. Shake vigorously until well combined.
3. Taste and adjust seasoning if needed.
Make the Glaze
1. Combine balsamic vinegar, brown sugar, and thyme in a saucepan over medium heat.
2. Stir until the sugar dissolves.
3. Bring to a gentle boil, then reduce heat to low.
4. Simmer for about 20 minutes, or until reduced by half and thick enough to coat the back of a spoon.
5. Remove from heat and allow to cool slightly. Store leftovers in a jar in the refrigerator.
Assemble the Salad
1. Place tomatoes, mozzarella, and most of the basil in a large bowl.
2. Drizzle with dressing and gently toss.
3. Transfer to a serving dish.
4. Just before serving, drizzle with the balsamic glaze and sprinkle with the remaining basil.
Fresh, colorful, and packed with flavor, this is one of those recipes that lets great ingredients do all the work!
