While we do not currently purchase through Grand Teton Ancient Grains, we are in contact with them, and this is the update they sent to us a little over a week ago...this is the same thing we are learning from other US farmers.
"I want to share an honest update with you about our einkorn supply.
Our einkorn flour is currently out of stock, and our einkorn berries won’t be far behind. We’re a small family farm on a real timeline, and running out of einkorn before harvest reminds us of that.
But I want to be clear about something.
There’s no reason to worry.
The fields are looking beautiful.
We planted plenty of einkorn this year. More than usual, in fact, to make sure we have enough for the coming year. The crop is developing well, and we’re optimistic about the einkorn harvest.
The water situation has been a gift. Many farming regions are dealing with serious drought this year, and our area is in a different place. Our reservoirs filled up over the fall and winter, and the Grand Tetons still have snow on the peaks, which means a steady water supply through the growing season.
We’re grateful for that, and grateful in a deeper way too. We pray over this farm and these fields, and we’d welcome your prayers as the crop continues to develop. So much of farming is out of our hands. We plant. We tend. We steward. And then we trust.
What to expect, and what we’re promising you.
Our Einkorn harvest will begin in July. We’ll be working quickly to get it harvested, cleaned, and milled so that we can begin shipping again.
You’ll be the first to know when einkorn is back. Because you’re on our list, you’ll hear from us before anyone else.
You’ll also get first access to a special harvest sale. It won’t be a public sale. It’s for our loyal customers and subscribers.
And we’ll keep you updated along the way, with photos from the fields and notes from harvest prep.
In the meantime, please don’t feel like you need to scramble.
We’ve heard from some folks who felt a bit of urgency about stocking up with a worry that they won’t be able to get einkorn. We encourage you to to hold out for another 8 weeks or so and we’ll have plenty to get you what you need.
Our einkorn is certified USDA Organic, Non-GMO, glyphosate-free, and grown on our regenerative family farm in Teton, Idaho. We use crop rotation, cover crops, and zero chemicals. We feed the soil, and the soil feeds the grain.That matters because healthy soil grows more nutritious grain. And because we grow it, clean it, and stone-mill it ourselves on the same farm, nothing gets handed off along the way. From the seed in the ground to the bag on your counter, we know exactly what’s in it and what isn’t.
Our regenerative organic farming is all about nutrient density and flavor.
That’s the einkorn worth waiting for.
If you’d like to cook with an ancient grain in the meantime, the two closest in character to einkorn are Emmer and Khorasan. Both are ancient wheats, both are wonderful in their own right, and both are still in stock on our farm. It’s actually a beautiful season to explore a new grain you may not have tried before.
