A little sweet, a little savory, and everything we love about fall cooking. One of our favorite recipes we bring back into rotation every year.

Ingredients
1 lb pasta
8oz spicy or sweet sausage
1lb butternut squash (peeled and diced)
1lb broccoli rabe (ends trimmed and cut in 2in pieces)
5 cloves of garlic
1 large red or sweet onion
1 cup chicken broth or bone broth
1/2 cup grated Parmesan

Directions
1. Preheat oven to 425°F
2. Blanch the broccoli rabe in a large pot of boiling salted water for two minutes drain and set aside.
3. Toss the butternut squash and onions with 1 tablespoon of olive oil, salt and pepper. Roast on a sheet pan for 25 minutes.
4. Bring a pot of water to a boil, and cook pasta per package instructions.
5. Add sausage to cold pan and break up sausage pieces as it cooks. Add garlic and finish cooking sausage until golden brown.
6. Finish cooking the butternut squash and onions in the pan with all ingredients. Deglaze with broth.
7. Add pasta directly from pot into pan with all ingredients.
8. Turn off heat and shower with grated parmesan.
