🏆We picked up the “Weeknight Winner” bundle from Mills Bottom Farms last weekend, and it is living up to its name!

👨🏼‍🍳Sheet Pan Pork Tenderloin, gnocchi & roasted squash/zucchini* 😍

Preheat the oven ♨️ to 425°F. Brush the pan lightly with olive 🫒 oil. Lay the tenderloin in the center, and surround with homemade or store-bought gnocchi (in the pasta aisle), and fresh squash/zucchini cut 🔪into wedges. You can leave the peel on if it’s small … just have that face up on the pan.

🥘Make sure everything is in a single layer and use an extra pan if necessary. Drizzle the top of everything with a little more olive oil, and sprinkle on your favorite garlicky oniony herb seasoning 🧄🧅🌿. Roast in the oven for 20 minutes ⏲️.

When you remove the gnocchi and the vegetables from the pan with a spatula to serve 🍽️, they will have a wonderful browned edge from the pan’s heated surface 😋. Serve them with slices of the tenderloin.

Tonight’s dinner reminded me of summer ☀️visits to my grandparents’ farm 👨‍🌾👩🏼‍🌾. There was always ham on hand from the prior visit’s pig 🐷. Papa Pat grew purple-hull peas and I would help Granny Bug shell them on the front porch. She was also the one who taught me how to make hot water 💧 cornbread. And we would always take a walk out to the blackberry bushes at the edge of the pasture and fill up our bellies & our buckets 🪣 .

Our purple hull peas were a farmers’ market find this weekend 🤩 (Southern Hospitality & More). Cook them in the pressure cooker with a small onion🧅 and a leftover ham bone 🍖(optional). Add enough water 💦 to just cover them and cook them on high-pressure for about 15 minutes with a 10 minute natural release. Season with salt 🧂 and pepper to taste.

While they cook, heat a 1/2 in. of vegetable oil (or lard) in a cast-iron skillet on the stove on med-high heat. In a heatproof bowl combine 2 cups of self rising cornmeal & 1.5 cups of hot water. Using a large ice cream scoop, add the batter to the oil (in batches) and press lightly with a spatula. Cook 🧑🏽‍🍳for 1 to 2 minutes on each side until brown, and drain on paper towels.

Heat the ham slices over medium heat until warm through and lightly browned.

To make the dessert galette 😋, combine 3 cups of pitted and sliced summer fruits like Chickasaw plums (Fuerte Farms), wild blackberries (our woods) & local 🫐 with 2 tbsp. of sugar and 1 tbsp. of cornstarch. Roll out a 10 inch pie 🥧 crust (homemade* or store bought) and heap the fruit mixture in the middle. Fold the edges of the crust around the bottom of the pile of fruit. Brushed the crust with egg wash and sprinkle with a little more sugar if desired. Bake at 425° for 15 minutes. Brush on some apple or apricot or dandelion jelly over the filling if desired for a shiny finish. Delicious on its own, or served with whipped cream or ice cream.

Sat. night we cooked Tikki Marsala (store-bought blend) with chickpeas & Zatar chicken 🍗(Harvest to Home Farms). Fresh mint 🪴 (Vater’s Garden) provided just the right finish!

For Sunday dinner, we enjoyed an oven-brunch omelet 🥚 (eggs from Hopestead Mini Farm/Harvest to Home Farms) & 🥓 bacon from Mills Bottom Farms. Recipe is in the picture captions.

Very different meals both made better with farmers market finds! 😎😋
