I have November locker dates for quarter, half or whole beef.
I just picked up my personal half beef. Thought I'd go through what you can expect if you get one from us.
Steaks cut 1" thick: 15 ribeyes, 14 tbones, 14 sirloin, 4 sirloin tip, 16 round, 2 large skirt, 1 flank, 1 tri tip.
Roasts 3-4 lbs: 6 chuck and 4 arm.
8 lbs stew meat
7 pkgs of short ribs
8 soup bones
100lbs burger
Extras
2 pkgs neck bones
Oxtail
Heart
Tongue
Liver
Suet for tallow
Marrow bones

Never thought I'd be making meat deliveries in this. I got told "Well if you're going to town anyway you can take this load of corn."
This was also my first time doing that.

This October marks the 8th anniversary of Sipka Meats. Come see me on October 3 from 10-1 at the Brookings Runnings parking lot and celebrate with sales on many items. This month's bundle is my FAVORITE 8. 1 each of Ribeyes, skirt steak, roast, stew meat, brats, summer sausage, sticks and ground beef. $125 for 10+ pounds of amazing local beef.

Not the best day for the chopping crew but this reminds me why we do what we do. Three generations of Post men working together to solve a problem and get the job done. Marv Post (papa), Doug Post (dad) and Zach Post (son) are quite the team.

This was such a wonderful event. Everything we ate was sourced locally. I'm truly a Converse W**es fan after sampling several of their amazing flavors. Our skirt steak was used to make the Italian pinwheels. Jason Parker did all of the producers proud with his amazing dishes.

Doug at Sinai Locker Service is cutting one of our steers. This was a smaller steer 614lbs on the rail. Average is 650 but can be up to 700.
I'm booking October 1st appointments now.
