PEACH CHIPOTLE PORK RIB CHOPS
🍑 3 Gaiss’ Market Rib Chops
🍑 1 Jar Gaiss’ Own Peach Chipotle Sauce
🍑 2 Fresh Peaches
🍑 Salt and Pepper
The night before cooking, or at least a few hours before, add salt and pepper to your rib chops then place into a container with a lid. Pour 3/4 of a jar of sauce making sure to turn the chops so they’re fully coated. Cut 2 peaches and add to the marinade. Place the container into the fridge and let sit.
A half hour before cooking, remove the rib chops from the fridge. After 30 minutes, preheat your grill to high heat for 5-10 minutes. Place rib chops on the grill on an angle to get great grill lines! Turn the heat slightly down and let cook for 4 minutes. Flip and cook for another 4 minutes. Continue to flip and grill so the rib chops cook evenly until the internal temp is 130. Brush the remaining 1/4 bottle of sauce over the pork chops and keep grilling. At this point you can also grill up your peaches! When the internal temp is 145, remove to a plate, cover with foil, and let rest for 5 minutes to lock in flavor.
NOTE: always be sure to discard leftover sauce that was used to marinade meat, as it contained raw meat was not cooked.
Overall internal temp is at minimum 145 degrees for safety.
Troubleshooting: if your sauce starts smoking, turn the grill down! The bones of the rib chops may burn, change the angle of your chops on the grill to get the bones away from the heat.
