Ragu! Here's a great recipe for anyone with lots of random vegetables.
Garden ragu:
1.5 large onion
5-8 cloves garlic
Equal weight of random vegetables to tomatoes
(We used about 1.5lbs total squash, peppers, carrots and 1.5lbs tomatoes)
Oregano and basil to taste ( we used about 4T of each [fresh])
Salt and pepper.
Heat 4T olive oil on medium heat, add onions and garlic and sauté until translucent. Add chopped veggies and tomatoes and turn to a low simmer for 30 minutes to 4 hours. Add oregano 20 minutes before done, and basil 10 minutes before done. Serve on top of your favorite pasta and enjoy!
