When smoking snack sticks low and slow is your friend. Here is how I did it: I set the smoker on the lowest temp possible, around 160°. After two hours, I bumped the smoker temperature up to 175° for about 1.5 hours. Then, finally to finish them, I raised the smoker temperature to 200° until they reached an internal temperature of 155°. All together it took about 6.5 hours. I used 21mm snack stick casing with Willie's snack stick seasoning.

The warmer weather has me craving brats. Who am I kidding! I always crave brats. Lol. If you never made them before. Jerry's brat seasoning and Blue Ribbon brat seasoning is our favorite. These brats are 💯 pure pork butt. We ground them twice and stuffed. We used #32 collagen casing made for fresh sausage. We prefer the bigger size brat. Fills a bun up nicely.

With all these cold temperatures here in WI. We decided to make 50lbs of brats and get ready for spring.

This mornings breakfast was so rewarding. Breakfast always tastes better when it's your own meat that's for breakfast. This process is so unbelievably simple- anybody can make this with Blue ribbon maple cure, pot, whisk, and a smoker.
