Ever wonder what it takes to get a ribeye on your plate? Obviously it all starts out on the ranch and that can take anywhere from 2-10 years depending on when you harvest the animal. Then once harvested we age it for 27 days to reduce water weight and increase flavor and tenderness.

In this video we watch Benjamin Morgan show us how we get it from the quarter to the ribeye!

The flat iron is easily one of the best cuts in the whole animal! Great marbling, tender, tons of flavor for a fraction of the cost of a tenderloin or ribeye. Beef doesn’t have to be expensive. Sometimes it’s all about knowing the right cut to ask for.
