When I don't know what to make for dinner I make it up. Sometimes I actually have a hit with the family. Tonight was one of those! Shredded chicken zucchini patties: 3C shredded zucchini well drained. 3C shredded chicken, 1.5 onions chopped, 1/4 # bacon, 2C flour, 1.5T baking powder, 2T TT FaGhettaGarlic. Render the bacon in a deep pan and add the onion and clarify. I used chicken thighs with the skin pulled off and braised them in the onion and bacon, covered. In a large bowl - zucchini, add the juices from braising the chicken. Shred the chicken and add along with the onion & bacon, mix well. Add three eggs and mix. Add the flour, baking powder and FaGhettaGarlic and mix until just combined. Drop in a skillet, spread to patty size with hot oil and fry on each side. Garnish with a couple of dashes of FaGhettaGarlic and serve. Made 8-10 servings - Kids loved it!
