While our founder, Paul Stephens, was visiting Italy, he realized that US mozzarella wasn't even close to the quality of mozzarella produced there. Since then, he's made it his mission to bring us mozzarella on par with what's being enjoyed across the pond in Italy. Although Blue Ridge Dairy started as just a man with a single cow, we've been able to expand our product range as well as the farmers markets you can find us at!

A quick tutorial by two Italians on how to make Neapolitan-style pizza with BRD's authentic Italian mozzarella. BRD mozzarella, like authentic Italian mozzarella, has a high moisture content, so it needs to be strained before use. The final result is a moist Neapolitan pizza, not from grease, but from the natural moisture of the sauce and cheese.

If you wanna give our mozzarella a try for a lasagna, pizza, chicken parm, or more: we tend to strain our mozzarella an hour or more beforehand by cutting each ball in half, placing in a strainer, and leaving it in the sink. Let us know how your experiences with our mozzarella goes, the results speak for themselves!

Dairy Dishes:
It sounds a little out there, but the watermelon and feta salad is the perfect light and refreshing dish you can make for summer get-togethers. Originating in Egypt, the watermelon and feta salad is versatile and simple to prepare. The core components are of course watermelon, feta, and a light dressing but other fruits and veggies go great with it such as onions, tomatoes, or olives. Personally, we like to add some basil, diced cucumbers, and thinly sliced red onions to ours. To make it, put cubed watermelon alongside any other components you like into a bowl, toss in a light amount of olive oil or a vinaigrette of your choosing, and finish with crumbling some feta on top. If you wanna give this recipe a try, we’ve found that our artisan brine aged feta works perfectly with the flavor profiles of this dish.
