DID YOU KNOW MEAT CAN ACTUALLY MOVE AFTER THE ANIMAL IS DEAD?! 🤯

Yep. You read that right!

Even after an animal has been slaughtered, its muscles can still twitch and contract.

But HOW?! 🤔

Muscle cells don't instantly stop functioning at the moment of death. They can still contain stored energy, and changes in calcium inside the muscle can trigger contractions.

This is especially possible before rigor mortis (when the muscles stiffen) has fully developed.

So if you ever see a video of a freshly cut piece of meat twitching, it isn't necessarily fake, and it definitely isn't coming back to life! 😂

It's just biology doing something incredibly strange.

🧊 WHAT HAPPENS AFTER DROP-OFF?

Custom processing is a step-by-step process, not an overnight pickup. After drop-off, your animal goes through chilling, dry-aging for at least 10 days, and preparation based on the cut sheet you provide. From there, the order is cut, wrapped, and flash-frozen to help protect freshness and make it ready for pickup.

That time in between is when the real work happens. We follow your instructions, keep the process organized, and prepare your order for the freezer or dinner table.

Livestock drop-off windows:
• Hogs: Tuesday 12–3 PM
• Beef: Thursday 12–3 PM

Retail shop hours:
Wednesday 7 AM–4 PM; Thursday 12 PM–4 PM; Friday 7 AM–4 PM; Saturday 9 AM–12 PM. Closed Sunday–Tuesday.

🚜 HALF-BEEF MATH, OUT LOUD 🚜

Thinking about a half beef? Here’s the plain-spoken version:

✅ Hanging weight is the weight you're charged on. Take-home weight is lower after aging, trim, bones and moisture loss. Plan on roughly 60–70% of hanging weight becoming packaged beef, and closer to 50% if you go mostly boneless and closely trimmed. The animal and your cut choices matter.

✅ Ground beef: a quarter commonly yields about 35–60 lb, so a half may land around 70–120 lb if you direct plenty of trim toward burger.

✅ Freezer space: plan on about 8–10 cubic feet for a half in a chest freezer, or closer to 11 cubic feet in an upright. Make sure your freezer is holding 0°F or colder, and don't overload it: 150+ lbs of meat will warm it up.

✅ Your cut sheet controls the final mix: steaks, roasts, burger, thickness, package sizes and other available requests.
