DID YOU KNOW male scallops have the classic white hue you usually see at the seafood counter. Female scallops are more of a bright pinky-peach color. Female scallops turn pink only when they're spawning; during this period, their glands fill with orange roe and turn bright coral, giving the adductor muscle a rosy/orange hue. The roe also gives spawning female scallops their unique flavor benefit: When pan-seared and tasted alongside a batch of equally fresh male scallops, their textures will be indistinguishable but those in the female batch—which retain their pink tint even after cooking—have a noticeably sweeter, richer flavor!
