We recently visited our friends at Grand Central Bakery to see the Beecher’s Loaf being baked from start to finish.

For years, we’ve partnered with local makers who share our belief that quality starts with great ingredients and people who care deeply about their craft. From grains grown in the Northwest, including the Skagit and Walla Walla Valleys, to olive oil carefully selected for the recipe, every detail of this loaf reflects that shared commitment.

Great cheese deserves great bread! 🍞

That’s why we’ve proudly partnered with Grand Central Bakery for years to create the custom loaf that brings our grilled cheese to life. Made with local flours and baked specifically for Beecher’s Seattle-area cafés, it’s a small detail that makes a big difference.

Our café manager team recently toured the bakery to see the loaf in production and left with an even greater appreciation for the people, skill, and care behind every bake. Here’s a look behind the loaf and the longtime local partnership that helps bring our grilled cheese to life 💛

One of our favorite cheeseboard tips for hosting: rustic cheese crumbles.

Using a cheese knife, gently break Flagship or Garlic Noir into bite-sized pieces for a cheeseboard that's both beautiful and easy to share.

Why does it work so well? During cheesemaking, our curds are milled into bite-size pieces before being pressed and aged. That curd structure remains part of the cheese, helping it separate naturally into perfect, nibble-worthy bites.
