For the Marinade:

* ½ cup orange juice
* ¼ cup lime juice
* ½ bunch cilantro diced
* 2 tbsp garlic minced
* 1 tbsp salt
* 1 tbsp onion powder
* 1 tbsp garlic powder
* 1 tbsp ground cumin
* 1 tbsp paprika
* 1 tsp ground black pepper

For the Tacos:

* 36 white corn tortillas
* ¼ cup cilantro diced
* ½ cup white onion diced
* ½ cup queso fresco crumbled

Instructions:
1.      Marinade Prep — Whisk together all the ingredients for the carne asada marinade.

2.      Marinate — Coat the flank steak thoroughly with the marinade, layer sliced oranges and onions on top, then cover and refrigerate for a minimum of 4 hours up to overnight.

3.      Grill to Temp — Discard the oranges, onions, and excess marinade. Grill the steak over direct heat to your preferred temperature: Rare (115℉–120℉), Medium Rare (120℉–125℉), Medium (130℉–135℉), or Well Done (140℉–145℉).

4.      Rest and Chop — Transfer the meat to a cutting board, tent with foil, and let rest for 10 minutes. Dice the steak into small 1/4-inch cubes.

5.      Assemble — Double-stack warm corn tortillas and load them with the chopped carne asada. Finish with freshly diced onion, cilantro, and crumbled queso fresco.

___________

For Hispanic Heritage Month, we’re spotlighting one of the most versatile, nutrient-packed staple ingredients in Mexican cuisine: Nopales! There are many ways to prepare this nopales but certainly one of the most delicious options is grilled! 🌵 😋

Check out the recipe below for Nopales Asados (Grilled Cactus Paddles). It’s for any Mexican fiesta! Best served hot off the grill and seasoned with fresh lime juice and salt. Check out the recipe below and let’s get grilling!

Ingredients:

* 8 cactus pads
* 2 tablespoons olive oil
* 4 limes
* 2 teaspoons salt
* 2 teaspoons paprika (optional)

Instructions:

1: Prep & Slice - Carefully slice away the outer edges and shave off the thorns from your cactus pads. Brush both sides lightly with olive oil. Starting from the center of each pad, make 3 to 4 vertical cuts down to the edge (about an inch apart) to allow for even grilling.

2: Grill to Perfection - Preheat your grill or cast-iron griddle to medium-high heat. Lay the cactus pads down and cook for 4 to 5 minutes per side. They are finished when tender with light char marks, transitioning from bright green to an olive tone, and no longer releasing liquid.

3: Season & Serve - Finish with a squeeze of fresh lime juice, sea salt, and a dash of paprika. Serve hot as a flavorful side dish, or use them as a hearty filling for tacos, quesadillas, and enchiladas!

Quick 10-Minute Veggie & Bean Quesadillas

Prep time: 5 mins | Cook time: 5 mins | Servings: 4

Ingredients:

• 8 flour tortillas (8-inch)
• 1½ cups shredded sharp cheddar cheese
• 1½ cups shredded Monterey Jack cheese
• ¾ cup cooked black beans (drained and rinsed)
• ½ red bell pepper (diced)
• 4 scallions (thinly sliced)
• ½ cup corn kernels
• 2 jalapeños (thinly sliced)
• For Serving: Fresh Pico de Gallo, Guacamole, Salsa, Sour Cream, & Cilantro

Instructions:

1. Prep the Tortillas: Lay the tortillas flat. Mix the cheddar and Monterey Jack together in a bowl.

2. Layer the Fillings: Sprinkle half of the cheese blend over one half of each tortilla. Top with black beans, red bell pepper, scallions, corn, and jalapeños. Sprinkle the remaining cheese on top, then fold each tortilla over into a half-moon shape.

3. Cook to Golden Perfection: Heat a dry cast-iron skillet over medium-low heat. Add two quesadillas at a time and cook for 1 to 2 minutes per side until the tortillas are crispy and golden brown, and the cheese is fully melted. (Lower the heat slightly if the outside browns before the cheese melts!)
