Out of the office today and soaking up some time on the lake.

The only screen we paid attention to all day was the Garmin on our little fisherman’s boat. No emails, no social media, just sunshine, water, and making memories.

Lunch was simple and straight from Lewis Land & Cattle. Country View pimento cheese, garlic and dill cheese curds, and slices of our favorite Pepper Jack jalapeño summer sausage.

By supper time, we wanted something quick but still farm raised. Loaded baked potatoes topped with pulled pork and a little Blues Hog barbecue sauce did the trick.

We wrapped up the day bringing the sun down from the front porch, thankful for good food, family time, and a slower pace.

Days like this are good for the soul ☀️

I keep asking myself, are we protecting rural communities, or just managing their decline in real time?

Economic development matters. Nobody is denying that. But so does protecting the land, the water, and the people already carrying these places.

The question is simple, even if the answer is not. Are our local, state, and federal leaders stabilizing rural economies, or are they watching them slowly get priced out and paved over?

Because from where I stand, it feels like rural communities are always the ones asked to adjust, absorb, and carry the weight.

That is what people miss. This is not just about one project. It is about a pattern.

And if a place like Eastern Kentucky can be treated as replaceable again, then nowhere is really off limits anymore.

Tick bites are now causing people to develop allergies to red meat. Cases are rising fast.

And somehow… fake meat is already lined up and waiting on the shelves.

Nobody has to ban beef if people become too afraid — or too allergic — to eat it.

As a farmer, I can’t help but pay attention to what’s happening. We raise real beef, on real pasture, and more people than ever are disconnected from where their food comes from.

I’m not here to tell anyone what to think. But I do think it’s worth asking questions.

In 1942, families learned quickly what it meant when food couldn’t just be taken for granted. Meat, sugar, butter, coffee, everyday staples were rationed, stretched, and carefully managed because supply simply couldn’t keep up with demand.

People planted gardens, raised what they could, preserved food, and leaned on local farmers more than ever before.

It feels like a distant piece of history… but maybe it shouldn’t.
