A hundred years ago, a farmer in the Sacramento Valley saved his seeds.

His son saved them after him. And Chris Capaul is saving them now.

The Speckled Bayo almost disappeared. It was never a commercial bean, never scaled up, never shipped nationwide. It survived in pockets of Northern California because families like the Capauls just kept growing it, quietly, season after season, because they knew it was worth keeping.

That is what a hundred years of farming looks like. Not a brand. Not a mission statement. Just a family that never stopped paying attention to the land.

The Baby Butter has the same story. Grown in rotation with rice, the way the valley has always done it, tender and sweet in a way that will completely change your mind about butter beans.

Both are in stock right now. Both come from the same Sacramento Valley soil the Capaul family has been tending since 1915.

Some things are worth waiting a hundred years for. These are two of them.

People have been asking us when Chaparro is coming back since the last bag sold out.

It is back. And if you know, you know.

The most soulful black bean we carry. Fudgy, fragrant, with a full-bodied inky broth that makes everything it touches taste better. Frijoles de olla. Smoky braised beans. Enfrijoladas. Tamales. A lazy weeknight bowl. It does not matter. Chaparro improves all of it.

Grown by the Telesfor and Teresa García families in Huamuchapa, Guerrero, hand-sown and hand-harvested at 440 meters above sea level using the traditional milpa system. January 2026 harvest, never sprayed with glyphosate.

Rare. Regional. Very much worth it.

Nobody needs to know it took you twenty minutes.

Chaparro in a burrito bowl is one of those combinations that just makes sense. Deep, fudgy, inky black beans with a full-bodied broth that soaks into every grain and makes the whole bowl taste like it has been cooking all day. Pile on the salsa, the avocado, the pickled onions, the hot sauce. Go rogue. The bowl holds up to everything you throw at it.

Happy Father's Day to all the dads out there. 🫘

Here's to the ones who taught us that the best meals are made with love and a little patience. The dads who stood at the stove stirring something low and slow. Who knew that good food takes time, and that time is the whole point.

Just like a good pot of beans.

Wishing every dad a day full of good food, good company, and a bowl of something that took all afternoon.

I'm not here to shame anyone's can of beans. We've all been there and we'll all be there again.

But I do want to make the case for dried beans, because I think a lot of people assume the difference is small. It isn't.

When you cook dried heirloom beans from scratch, two things happen. You get the beans, and you get the broth. That liquid that builds up in the pot while they cook is one of the most flavorful things in your kitchen. Silky, savory, deeply good. Canned beans come with liquid you rinse off and forget about.

You also get full control. Salt, aromatics, texture, timing. The bean becomes yours.

And when those beans have a harvest date on the bag, when you know who grew them and where, it adds something that no can on a shelf can replicate.

Worth the extra hour. Every single time.

What made you switch to dried beans, or are you still on the fence? Tell me below.

Ash found us through a podcast, signed up for the Heirloom Bean + Grain Club, and this was her very first box. We love a full circle moment.

The Chaparro does that to people. Every single time.

The Club is closed for the summer but you can still get on the waitlist now and be first in line when we reopen in fall.

Good food should reach everyone, and that is something we believe in deeply.

When Securing Safe Food, a nonprofit dedicated to fighting food insecurity among individuals with food allergies, reached out asking for support, we did not hesitate. We donated Baby Butter Beans to food pantries across Los Angeles helping families who are navigating both food insecurity and food allergies.

Every bean we grow comes from a small family farm we know by name. Heirloom varieties, never sprayed with glyphosate, and naturally free from common allergens, making them a wholesome and safe pantry staple for allergy-conscious families.

Giving back where we can will always matter to us. Grateful to Securing Safe Food for the meaningful work they do every day. 🫘

What does food security mean to you and your community? We would love to hear your thoughts below. 🧡

Scientists spent years trying to bring this bean back. One taste and you will understand why.

The Southwest Gold starts with the Zuni Gold, cultivated by the Zuni people in the Four Corners region and so iconic it earned a spot on the Slow Food Ark of Taste. Mosaic virus and drought nearly wiped it out commercially. UC Davis spent years cross-pollinating to preserve everything that made it legendary while making it possible to grow again.

Nutty, creamy, golden broth. Grown by Fred and Cooper Brossy at their certified organic, no-till farm in Magic Valley, Idaho. October 2025 harvest, never sprayed with glyphosate.

Worth every year of the wait.
