Spicy Coconut Lemongrass Chicken 🍗🥥
This Thai-inspired dish brings together creamy coconut, aromatic lemongrass, and bold spices for a delicious, comforting meal! 🌶️🍛
🌿 Ingredients:
2 boneless chicken breasts, sliced
1 can coconut milk (13.5 oz)
1 stalk lemongrass, finely chopped
2 cloves garlic, minced
1-inch ginger, grated
1 tbsp red curry paste
1 tsp fish sauce (or soy sauce for a vegetarian option)
1 tbsp lime juice
1 tbsp oil
1 tsp brown sugar
1 small red chili, sliced (optional)
Fresh cilantro and lime wedges for garnish
🔥 Instructions:
1️⃣ Marinate the Chicken: Mix chicken with 1 tbsp coconut milk, garlic, ginger, and fish sauce. Let sit for 15 minutes.
2️⃣ Cook the Chicken: Heat oil in a pan, add marinated chicken, and cook until golden brown. Set aside.
3️⃣ Prepare the Sauce: In the same pan, sauté lemongrass and red curry paste for 1 minute. Add coconut milk, brown sugar, lime juice, and chili slices. Stir well.
