For the Soup

2 tablespoons unsalted butter
8 ounces diced ham (see note)
1 cup finely chopped yellow onion
2 tablespoons minced garlic
2 tablespoons dry white wine (see note)
3 tablespoons all-purpose flour
32 ounces chicken stock (see note)
1 cup whole milk
4 ounces Swiss cheese, grated
4 ounces Gruyere cheese, grated
1 tablespoon chopped fresh parsley
