The Start of Gillian’s Foods

Bob Otolo worked in food service all his life, starting as a line cook and working all the way up to executive chef. He loved his work but found his passion and lifelong challenge when his daughter, Gillian, was diagnosed with Celiac Disease in 1991. Bob and Sue, his wife, noticed Gillian wasn’t growing as quickly as the other kids her age. It took over a year of testing until a biopsy of Gillian’s small intestine revealed that she had celiac disease. Although this diagnosis meant she had to be careful what she ate, Bob and Sue were overjoyed with getting an answer. The new challenge was now creating exciting meals that tasted great and didn’t crumble - and Bob was up for that challenge!

�Since then, Bob and his dedicated team have created an amazing assortment of gluten-free breads and delicious deserts. Everyday, we here at Gillian’s work to innovate and improve our line of safe and healthy foods, and make gluten intolerance easier to manage. Bob will always guarantee the products are 100% gluten-free. The health of Gillian and others with Celiac Disease depend on this.
