They're sweet. They're tangy. Has some spicy savory flavor without the burn. They're Honey-Tajin ribs. The other knockout meal item I made for my birthday and soon to be staple of my top tier menu list.

Did you know: the basic ingredients of tajin are the same ingredients in the most popular dishes in Mexico?

> guajillo
> ancho
> lime
> salt

Commonly found in Chicken Tinga, Cochinito Pibil, Tamales, Pozole rojo, and of course Al Pastor... hence making these with the wings previously posted.

Good evening, America!! Hope everyone enjoyed their Labor Day weekend! I know one family sure did! Had a call to cater for a young man's 19th birthday, and they wanted to see what I can make, especially after taking a look at some of my work here on the gram!

So I made them a Surf and Turf Parrillada consisting of:
> Wagyu Fajita with Chimichrri
> Black Barrel Tequila Lime Chicken
> Jumbo Gulf Shrimp

I made sure everything was made to perfection down to the chimi and compound butter.

To my surprise, turns out the kid was a fan of my steak melt I posted last week from the throwback posts and wanted me to make one for him. So I made him a Wagyu NY Strip chihuahua melt with chimichurri on toasted bollio with compound butter and mayo. The whole family got to sample the other two sandwiches, too!

Made this beautiful Crawfish Etoufée with roasted garlic confít bread. Born and raised in the Gulf Coast sure did rub off on me, and I'm blessed to have mastered cajun/creole cuisine from many influences.

Then there's this... Seared Swordfish with Lemon-butter caper sauce over white cilantro-lime rice and pan fried asparagus. I worked hard on this one to ensure the fine dining essence was highlighted when I made this dish.

Made this one for a special dinner for the owner of the late restaurant mentioned in my previous post.

A personal favorite for me when it comes to seafood.

Up next on the memory lane showcase: An Ode to a long gone but never forgotten Spring Branch legend.

This is a classic "Steak Night Special" in reminiscence of my last restaurant job as the evening Sous/cook at The Branch. I was the Grill Master for the highly renowned steak night at that Gastropub. That's when I perfected my grilling and searing and made a name for myself with Spring Branch locals.

Happy New Year, from Chef Izzy and Aprium Foods! After a great winter break, I'm glad to announce that I'll be preparing to soft launch a meal prep program along with cake orders this 2024, and it's starting off with the first cheesecake sale of the year!

There are limited spots available, so first come, first serve. Once the program takes off, I'll be accepting inquiries via my carrd link in the profile.
