Some things sound scary, but really aren't.

Anchovy-stuffed olives? Perfect in a martini. Just ask Tessa!

Momofuku Chili Crunch in chocolate? Surprisingly good. Really good, actually.

And hot habanero peppers tucked into a triple cream cheese? Before you can even register the heat, all that lovely creaminess takes over.

See? Nothing to be afraid of. Well, maybe trying something new. But that's half the fun at Food Union.

One sure sign the holidays are coming? Pâté starts showing up!

I start with the shelf-stable varieties, and in a few weeks the refrigerated options will arrive. More people coming through the door means I can bring in some of the more interesting stuff. One of the perks of the holiday season!

Rougié makes a very nice pâté. This one is duck and pork with a hint of orange. Rich, savory, and just enough citrus to brighten it up. All it really needs is a good baguette, a few cornichons, and maybe a little Dijon.

Not that you need a holiday to eat pâté.

A triple crème cheese with habaneros sounds a little scary.

But it’s actually pretty brilliant.

Tulip Tree took their original Trillium—a rich, buttery triple crème bloomy rind—and added habanero peppers for the heat lovers.

And here’s the beauty of it—the triple crème cools the kick. No need to keep a glass of milk nearby.

Amazing chocolate without added sugar. Is it magic?

Nope. Dates.

It’s all the rage, and for good reason. Dates bring the sweetness along with fiber, potassium and antioxidants—and without the same sugar highs and lows.

So no, not magic.

Just dates doing a surprisingly good job pretending to be sugar.
