TWO BREEDS _ TWO DISTINCT TEXTURES
Two remarkable interpretations of Parmigiano Reggiano have arrived at Giordano European Cheese Shop.
As we know, Parmigiano Reggiano needs no introduction. Revered for ages, this iconic cheese continues to be crafted using the same traditional ingredients and time-honored methods.
Before the Second Industrial Revolution in the mid-19th century, three main cattle breeds were traditionally used in the production of Parmigiano Reggiano: the Bruna Alpina ( Alpine Brown), the Reggiana, (Red Cow) and the Bianca Modenese ( Modenese White Cow).
With industrialization came a growing appetite for this versatile, celebrated cheese. To meet rising demand, cheesemakers increasingly turned to the Friesian breed, known for its high milk production.
But the differences between Parmigiano Reggiano made from heritage breeds and that made from more industrially favored breeds go beyond milk composition. They can also be experienced in the cheese’s texture, structure, and overall character.
This month, we invite you to discover two distinctive expressions of the King of Cheese.
Rocca Parmigiano Reggiano DOP — 36+ Months, Holstein Friesian cow.
With 36 months of aging, its texture becomes beautifully crumbly and crystalline, delivering an intense burst of savory umami, nutty sweetness, and a long, caramelized finish. Bold, complex, and deeply satisfying, this is Parmigiano Reggiano at its most expressive.
Valserina Brown Cow Parmigiano Reggiano DOP — 24+ Months, Bruna Italiana
Often prized for its exceptional cheesemaking qualities, milk from the Italian Brown Cow, produces a Parmigiano Reggiano that is both flavorful and delicate.
The breed’s milk composition, including its favorable casein profile, contributes to the incorporation of fat and protein during cheesemaking, helping create a cheese with a more supple, creamy character. Offering a sweet, delicate flavor profile with an elegant balance and a softer expression of the King of Cheese.
Buon Appetito
