A little first look from the coast. A few ideas for your dinner table. 🐟🍋
This week at Madden’s, we’re looking forward to the return of Icelandic Haddock and Black Sea Bass, plus North Carolina Bigeye Tuna. Three very different fish worth getting to know—and we’ve got a few thoughts on what to do with them.
🍋 ICELANDIC HADDOCK
If cod is your usual, give haddock a spot in the rotation. Mild, tender and beautifully flaky, with a little more flavor of its own. A light coating of Madden’s Seafood Breader and a hot skillet makes a pretty convincing fish sandwich. Butter, lemon and herbs in the oven? Equally good.
🔥 BLACK SEA BASS
Delicate white flakes, a touch of sweetness and just enough richness. We’d go with a golden pan-sear, then brown butter, lemon and capers. Simple ingredients that let a good piece of fish do the talking.
🌊 NORTH CAROLINA BIGEYE TUNA
Deep red, rich and meaty, coming from our own NC coast. If you’ve been enjoying the bluefin, here’s a different member of the tuna family to try. Think sesame, soy, scallions and a spoonful of Dragon Crunch to finish.
Also taking shape for the weekend:
• Faroe Islands Salmon & King Salmon
• Grouper, Flounder & Beeliner Snapper
• Fresh NC Shrimp & New England Scallops
• Dukes of Topsail Sound Oysters
• Littleneck Clams & PEI Mussels
This is your early look, with availability still being confirmed. We’ll keep you posted as the full board comes together.
Already know what you’re cooking? Friday + Saturday pre-orders are open. Getting your request in early helps us plan what to bring back from the coast—and gives you one less thing to figure out this weekend.
Order through the link in our bio, or call/text 910-376-1900. Not sure what to pick? Tell us what you like and how you want to cook it. We’ll help from there.
See y’all at the stand! 🦐
