From all of us at Bay’s, thank you so much for your incredible support! We’re thrilled that Pueblo County beef will be on our menu soon, and we can’t wait for you to enjoy it.

We also want to keep you in the loop on our growth plans. We’ve officially re‑submitted our original expansion proposal to the City of Pueblo, Colorado - City Government.

This proposal was first submitted back in August 2025, and we were grateful to receive early encouragement from Pueblo Economic Development Corporation, Pueblo County, the Colorado Department of Agriculture and the U.S. Department of Agriculture regarding potential sites and financing pathways. Now, we’re looking forward to hearing back from the city and explore what’s possible right here in Pueblo in addition to our surrounding counties. Stay tuned!

📢BIG NEWS! Starting April 1, Bay’s Meat Market is introducing locally raised beef from right here in Pueblo County, including dry-aged cuts.

We’re proud to support local ranchers, keep dollars in our community, and strengthen Southern Colorado’s food system.

We’re also working to expand local meat processing to better serve ranchers across the region. After several years of effort, we’re continuing to explore opportunities both locally and in nearby counties to make that vision a reality. Stay tuned for more!

Did you know Pueblo has a long history of meat markets and local ranching? This historic photo is a reminder of that tradition.

For 11 years, we’ve been proud to carry it forward and continue to bring quality meat to your tables, sourcing locally whenever possible.

And on March 18… we’re raising the steaks.😁

Outstanding early photo of an 1896 Pueblo butcher / grocery store (or cash markets as they were known). In this photo you see Jerry Nessen, George Leazer, Charles Delebar, and Charles Leazer. This cash market was located at 213 Santa Fe (later 225 Santa Fe). The store was originally owned by W.M. Eggert. In 1893 he sold the store to W.M. Leazer and I.L. Stebbins. Half of the store was later sold to J.G. Myers.

In 1897 August Boldreghini (a former employee at the Leazer market), bought out the market, and reopened it at 24th and Grand St. In 1901 he would sell the store to Schon & Co. Boldreghini would later open the Dundee Cash Market.

Other cash markets included the Cash Market at the corner of Union and Victoria, run by L.H. Davis. Also the Bessemer Cash Market, located at 1200 Routt Ave., run by E.C. Popejoy.

The Delebars would be back in the grocery business in 1921, opening Sunnyside Cash Market on West Northern (first at 316, then later at 407 W. Northern). Soon after they would be followed by Sellers' Cash Market, at Mesa Junction.
