A little about North Side Specialty Meat
Who are we? We are a small butcher shop in Pottsville, Pa committed to passing on the freshest, best tasting products to our customers. Our homemade products made the old fashioned way. As a young man, I was fortunate enough to apprentice if you will well more like hang out with an older butcher. He was of Pennsylvania German heritage and a fourth generation butcher. Of the many things I have learned from this man was his commitment to preserving the old ways of butchering and not using any preservatives. In todays fast paced assembly line, the meat industry has seemed to lost our way and most importantly lost the taste of the old ways of butchering. Sure our way takes more time and work but we feel it is well worth the effort.
Why and how we do things? We decided to get into this business because all the old school butchers are almost gone-Old school meaning a person that takes a whole beef or pig and breaks it down to the cuts you all know. We decided from the start we were not going to be another, get your beef in a box and push tons of products out the door as fast as we could. That is not a butcher in our eyes, but to each their own. We deal with two local Angus farms, and a Berks county hog farm. All three of these folks are passionate about producing the best animals they can, or we would not deal with them. Secondly, we pick the animals out we want, and we transport them to be USDA harvested and then we pick up these animals up to process in our shop. This takes about 7 other hands out of the game if you will, and we control quality. The other products we make right here and smoke it right here in Pottsville. We do not slap our label on someone else’s product ever-that is just not in us. We will continue to do things the old way because it is the right way.
If something would not go on our plate it will not go on your families plate either.We look forward to serving this area for a long time, so we do it right every time.
