Vendor Spotlight: Plate Steel Bakery
After reading the book Flour, Water, Salt, Yeast by Ken Forkish his desire for experimentation with the process grew as did his ability to scale the process. Adrian bought retired and broken commercial kitchen equipment and refurbished them to make batches of sourdough bread in his garage on Bass Lake near Dunvilla, MN. Two commercial fridges, a 60's era Hobart mixer, a custom digital proofer, and a1978 South Bend gas oven enables him to make up to 32 loaves in a batch. Transitioning from Dutch-oven based baking to open shelf deck oven style required the addition of two 105 lb each 5/16" steel plates to the oven to create the thermally stable baking deck. Adrian has been selling his sourdough bread at the P.R. Farmers market for the last 3 years and also at some local events. Look for the big yellow SOURDOUGH flag at Veteran’s Park on Fridays and you are guaranteed a freshly baked loaf.
