What you'll need:
- Smoker

Ingredients:
- 1 lb pork butt
- Spicy or regular mustard (enough to coat)

- 3 tbsp ground mustard
- 3 tbsp ground ginger
- 3 tbsp chili powder
- 3 tbsp kosher salt

Steps:
1. Trim the fat: With a carving knife, trim the excess fat off the pork butt.
2. Coat with mustard: Place the trimmed pork on a baking sheet and coat all over with spicy or regular mustard, whichever you have.
3. Make the rub: In a mixing bowl, combine the brown sugar, smoked paprika, granulated garlic, cumin, ground mustard, ground ginger, chili powder, kosher salt, and onion powder. Mix by hand until evenly blended.
4. Bind the crust: Pack the rub onto both sides of the meat by hand, pressing firmly so it sticks and forms a thick crust.
